Dude, I totally feel awesomer than Betty Crocker right now. I knew I had all the ingredients necessary for baking muffins, or cookies, or bread, or even a cake. But the thing is, I'm not really a baker. Those who know me always laugh, because I'm terrible at using measuring utensils. I mean, it took me a few tries before I finally mastered no-bake cookies. Chyeah…
So anyways, I decided to wing it and mixed up the necessary ingredients like the eggs, the (gluten-free) all purpose flour, baking soda, salt, agave syrup (instead of sugar), coconut oil (instead of olive or canola or whatever), almond milk (instead of water), and a whole lotta LOVE. To get a little fun and funky, I also mixed in a scoop of my chocolate Shakeology powder, oatmeal, some nutmeg, and some cinnamon. After all was well and mixed, I poured the mixture into the muffin tray and then added some crushed walnuts on top of each. I placed the tray in the oven at 400 degrees and about 30-45 minutes later, voila! Muffins!
See, I'm quite terrible. I can't give you measurements or even proper timing.
I will tell you though, the muffins taste like autumn delight, and it's a totally clean, guilt-free recipe. And they're moist and fluffy, unlike most gluten-free baked goods that tend to be a little drier and denser. I'm totally shocked I pulled this off--I baked muffins. What the heck. BUT, I'm also totally excited. You know this means there will be a lot more experimenting in my kitchen from now on ;).
